I made some scones for a morning tea with friends yesterday, and put in them dates, walnuts, cinnamon and rind of one orange. How delicious! Will be doing that again. If you try this - remember to reduce the salt, add a tsp of white sugar (or replace the salt with sugar entirely), to make a sweet scone base.
While the oven was on and child napping, I made an orange cake that that I've been meaning to try for a while. It's so easy, moist and delicious, I'm going to share it with you. I guarantee once you've tried this, it will be a staple in your recipe book.
In food processor blitz:
Quartered whole orange - pips n all!
½ C water
Add:
1 tsp baking soda, 2 eggs, 1 C sugar, 2 C flour, 125 g soft butter
Stir in handful sultanas & walnuts (optional but recommended - delicious)
I bake in two ungreased silicone cake tins (so much easier to clean up!), 180 cel 15/20 min til golden on top.

Join together & top with icing of choice. I 'jhooshed' it up a bit and made an almond butter icing for the middle, and a lemon / icing sugar glaze for the top. But anything would work.
Today, it was a quick dinner recipe - salmon quiche. This recipe uses tinned salmon - yep - tinned. And I tell you, it's yummy. Even Maisie agrees. You could probably use tinned smoked fish too, but I've not tried it yet.

440g tin salmon, drained, spine bones removed, flesh broken into flakes
5 eggs
Add:

½ tsp baking powder
2 C milk
75g melted butter
1 C grated cheese
1 small onion, chopped
1 T chives, dill, or parsley

Just when I wasn't looking, Maisie snuck up to find the chocolate sprinkle shaker that I use for topping her milk fluffies with (steamed foamed milk), and our cappuccinos.
And here is a cleaner version of the her at playgroup having morning tea. Although not looking too impressed that I'm taking yet another photo while she's trying to eat her banana in peace.
The winter here is in full swing and the days are only getting up to 15 deg, and down to 0 some nights! Even the chooks aren't that impressed with egg production a bit slower at the moment, but still enough to keep us in stock so can't yell at them too much.

Particularly keen to get some Scottish recipes too such as bannock bread. I know I can get many on the internet, but it's just not the same as when it's a tried and true recipe from friends & family.
